Texans Love Their Onions

Onions are one of our most ancient vegetables for cooking. People also use them for their medicinal qualities. Onions are available in many styles, and, when properly used, add a perfect touch to your dish.

Most grocery stores offer white and yellow onions. Texans cook with lots of yellow onions, which are sometimes called sweet onions because of their sweeter flavor.

Other vegetables in the onion family include garlic, and leeks. Garlic is extremely potent and flavorful. Leeks consist of long green stalks with white bulbs on one end. Leeks have a milder flavor then onions, and are wonderful in soups.

Health Properties
Onions contain juices that act as a natural antibiotic. They contain mustard oils which stimulate the appetite. Consequently, they are good to eat when suffering from a cold or some other kind of virus. Garlic contains all these properties in a compact, strong form.

Some people treat their colds and flus with a tall grass of carrot juice with one or two cloves of garlic. The result is a palatable drink. You may have to hold your nose when drinking!

Cooking With Onions
Read through the recipes as to cooking methods. It is very common to begin a recipe by sauting sliced onion in a pan or skillet. The favor of the onion comes out in the oil as it browns.

Onions can even be cooked long enough to become caramelized. This process is used in a delicious "onion gravy" for mashed potatoes See recipe. This gravy recipe illustrates the versatility in this vegetable.
