Cherry Chocolate Chip Cookies

If you’ve ever wondered what’s a good use for those candied cherries that show up at the grocery stores around the holidays, here it is! They make very colorful, good holiday cookies.

I used Pennant Red Cherries and Pennant Green Cherries for this recipe. If you can’t find them locally, you can buy them year-round from Amazon. And I confess: I got the recipe for Cherry Chocolate Chip Cookies off of the Pennant container when I purchased them to make a fruitcake. They were so good, I decided to publish it here.

Ingredients

  • 2 1/4 all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 24 oz. semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 8 oz. container of red or green candied cherries (chopped)

Instructions

  1. Preheat oven to 375°F.
  2. Combine flour, baking soda and salt in a small bowl.
  3. Beat butter, the sugars and vanilla extract in a large mixing bowl until creamy. Add eggs one at a time, mixing well after each one.
  4. Gradually add the flour mixture and then stir in the chocolate chips, nuts and fruit.
  5. Drop by rounded tablespoons onto ungreased baking sheets.
  6. Bake for 9 to 12 minutes or until golden brown. Let cool completely on baking sheet. Garnish with whole cherries.
  7. Makes about 3 dozen cookies.
