Potatoes, fresh green beans, bacon, onion – this soup is delicious. In German it’s called Gruene Bohnsuppe. (Suppe = soup in German), and it is an extremely easy recipe to put together. Use red potatoes, because they are firmer than russets. The most time consuming part of making German Green Bean Soup is trimming the green beans.
I used regular cans of chicken broth to make this, but you can enhance the recipe by using chicken stock, either sore made or homemade, if you wish.

- 6 slices bacon
- 1 small onion
- 1.5 lbs to 2 lbs fresh green beans, trimmed
- 1 lb. potatoes
- 4 cans chicken broth or stock
Instructions
- Slice the onion thinly. Trim the green beans and cut into 1-inch long pieces.
- Chop the bacon into 1-inch wide pieces.
- Place the bacon into a cold saucepan or stock pot. Cook bacon on medium to medium hight heat until cooked.
- Add chopped onion. Cook until the onion softens.
- Add the chicken broth or stock, along with the green beans and potatoes.
- Bring to a boil. Lower heat and simmer until vegetables are cooked, about twenty minutes.
- Salt and pepper to taste.
