Texas Monthly magazine published this batched-version of the prickly pear margarita, which is served at the super cool Starlight Theater Restaurant & Saloon in Terlingua. The cocktail’s official name is Starlight Theater’s Prickly Pear’ita. We adapted the batched recipe for one drink. For the prickly pear syrup or nectar, choose a product that has real sugar. Avoid the cheap stuff with corn syrup because it messes up your drink, amongst other things.

Ingredients

2 ounces tequila

1 ounce prickly pear syrup

1 ounce fresh squeezed lime juice

½ ounce simple syrup

salt (optional)
Instructions
- Mix together the tequila, prickly pear syrup, simple syrup and lime juice in a cocktail shaker.
- Shake vigorously and strain into a collins glass filled with ice cubes.
- Some folks rub the rim of each glass with a cut lime wedge and dip the rim into salt to coat it thoroughly.
- Makes 1 delicious margarita.
