Description

In this recipe, we describe two methods for preparing apple fritters. The above photo illustrates the first method.


Ingredients

  • 4 medium cooking apples (such as Jonathan, Idared or Golden Delicious)
  • Vegetable oil for frying
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Peel, core and finely chop the apples. Cover with plastic wrap and set aside while you make the batter.
  2. Combine the flour, salt, baking powder and sugar in a medium mixing bowl. In a separate bowl, stir together the eggs, milk, oil and vanilla. Add egg mixture to dry ingredients and stir well. Fold the chopped apples into the batter.
  3. Heat 3 or 4 inches of cooking oil to a temperature of 375°F in a dutch oven, large saucepan or skillet.
  4. Drop apple batter by tablespoonfuls into the hot oil and fry about 3 minutes or until golden. Remove from oil with a slotted spoon or spatula and drain on paper towels.
  5. Serve with Apple Fritter Glaze (recipe below) or sprinkled with confectioners’ sugar.
  6. Makes about a dozen fritters.
  1. The alternative method involves coring and peeling the apples, then slicing each apple into 8 wedges.
  2. Dip each wedge into the batter using a toothpick. Immediately drop each wedge into the hot oil and fry for 2 to 3 minutes or until golden. (Don’t fry the toothpick.)
  3. Drain on paper towels and serve immediately.
  4. Makes 32 small apple fritters.

Apple Fritter Glaze

  • 1-1/2 cups sifted confectioners’ sugar
  • 1/4 teaspoon salt
  • 3 to 3-1/2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter, melted
