Ingredients
- 2 or 3 dozen whole tortilla chips OR 12 fresh corn tortillas
- 1/2 pound Longhorn cheese or Monterrey Jack cheese (or combination of each)
- Refried beans
- 1 jar pickled jalapeño chile slices
- 4 scallions, finely chopped
- Salt
Instructions
- You can fry your own tortilla chips, or use store-bought.
- To make the nachos, place crisp tortilla chips on a cookie sheet or large plate. Heat up the refried beans in a saucepan, and spoon over the chips.
- Cover this with the grated cheese. Place under the broiler until the cheese becomes bubbly.
- While still hot, add slices of jalapeno and some chopped scallions. Serve and eat.
