Ingredients

  • 2 or 3 dozen whole tortilla chips OR 12 fresh corn tortillas
  • 1/2 pound Longhorn cheese or Monterrey Jack cheese (or combination of each)
  • Refried beans
  • 1 jar pickled jalapeño chile slices
  • 4 scallions, finely chopped
  • Salt

Instructions

  1. You can fry your own tortilla chips, or use store-bought.
  2. To make the nachos, place crisp tortilla chips on a cookie sheet or large plate. Heat up the refried beans in a saucepan, and spoon over the chips.
  3. Cover this with the grated cheese. Place under the broiler until the cheese becomes bubbly.
  4. While still hot, add slices of jalapeno and some chopped scallions. Serve and eat.
