Flank Steak Taco Salad

Ingredients

  • 1 flank steak, 1 to 2 pounds
  • 1/4 cup fresh lime juice
  • 1 teaspoon salt
  • 2 cloves garlic
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 bunch cilantro
  • 1/2 cup olive oil

Instructions

  1. Combine all ingredients except oil and the flank steak in a food processor or blender. Blend on high, and slowly add the oil to make an emulsion. This should be like a salad dressing. Use half of this mixture to marinate the flank steak, set the other half aside in the refrigerator.
  2. Marinate the flank steak for at least 1 hour or overnight.
  3. Cook the flank steak on a grill or in a large pan on the stove to desired doneness. Medium seems to work best here.
  4. When the steak is done, allow to rest for 10 minutes or refrigerate until ready to use.
