Ingredients

  • 1-1/2 cups fresh corn, cut from cob
  • 1 cup canned black beans, rinsed and drained
  • 1 medium red pepper, chopped
  • 1/4 cup finely chopped onion
  • 1 jalapeño pepper, seeded and finely chopped (you may use more, depending on the size of the pepper and personal tastes)
  • 1 clove garlic, minced or put through a garlic press
  • 2 tablespoons fresh lime juice
  • 1 tablespoon red wine vinegar
  • 2 to 3 tablespoons chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Put the corn in a small saucepan, barely covering it with water, and bring to a boil.
  2. Boil for 3 minutes until crisp-tender. Drain and cool.
  3. Combine corn with remaining ingredients.
  4. Cover and refrigerate for at least 1 hour to allow flavors to develop.
  5. Bring to room temperature before serving.
  6. Makes about 4 cups.
