Ingredients
- 2 pounds fresh green beans, washed and snapped
- 1/2 pound salt pork
- 1 teaspoon salt
- 6 or 7 medium new potatoes (red skin potatoes)
Instructions
- In a heavy Dutch oven or large pot, combine the beans, salt and salt pork with enough water to cover. Over medium-high heat, bring beans to a boil and cover. Reduce heat to low and cook for 1 hour.
- Then, add the potatoes, cover, and cook for an additional 45 minutes.
- Remove lid, and cook over low heat until the liquid is substantially reduced and beans are very tender. (Test the potatoes with a fork after about 25 or 30 minutes. If they’re easily pierced, remove them. Do not let the potatoes cook to pieces. Keep warm and put them back in the pot when beans are done.)
- Makes 6 or 7 servings.
