Irish Coffee

Description

A frothy coffee that’s a perfect after-dinner pick me up.

Ingredients

  • 1/2 to 2/3 cup strong, hot coffee
  • 1 teaspoon sugar
  • 2 ounces Irish whiskey
  • 2 ounces heavy cream (whipping cream)

Instructions

  1. Pour the coffee into an Irish coffee glass. Add the sugar and stir to dissolve. Stir in the whiskey. Then, pour the cream carefully over the back of a spoon so that it floats on top of the drink.
  2. Brown sugar can be substituted for the white sugar for a duskier flavor, and some folks prefer to lightly whip the cream before spooning it on top. But don’t whip it until it’s stiff. You’re supposed to sip the drink through the cream; the cream shouldn’t be a barrier between you and the important stuff.

Notes

Whipped Cream: 1 cup of heavy whipping cream, 3 tablespoons of sugar.   With a hand mixer, beat the whipping cream and one tablespoon of sugar until mixture thickens.  Add the remaining two tablespoons as it forms stiff peaks.
