Ingredients

1/2 cup sugar

1/4 cup sifted, all-purpose flour

1/3 cup pineapple juice

1 egg yolk, slightly beaten

1 tablespoon fresh lemon juice

1/2 cup drained, canned crushed pineapple
Instructions
- Combine the sugar, flour, pineapple juice and egg yolk in a saucepan. Cook over low heat until thickened, stirring frequently. Remove from heat.
- Stir in the lemon juice and crushed pineapple. Allow to cool before filling cake.
- Makes enough to fill a 3-layer cake.
