BBQ Bone-In Chicken Thighs Recipe

This is an excellent, healthy meal using bone-in, skin-on chicken thighs made in a pressure cooker or Instapot. I recommend buying the chicken thigh meat with the skin-on, because it tastes better. For this recipe use a bottle of your favorite barbecue sauce. The best ones come from Texas, naturally.

Description

This is an excellent, healthy meal using bone-in, skin-on chicken thighs made in a pressure cooker. I recommend buying the meat with the skin-on, because it tastes better. Use a bottle of your favorite barbecue sauce. The best ones come from Texas, naturally.


Ingredients

  • 1 bottle of barbecue sauce
  • 9 bone-in, skin-on chicken thighs
  • 1 cup of water

Instructions

  1. Wash the chicken thighs and pat dry with paper towels.
  2. Pour one cup of water into your pressure cooker.
  3. Layer three to four thighs along the bottom. Brush BBQ sauce over the chicken. Add the rest of the chicken forming a second layer. Brush with more sauce.
  4. Cook on poultry setting, or on high for twenty minutes.
  5. Optional: When done, place chicken onto a cookie sheet lined with aluminum foil, and cook under the oven broiler for four to five minutes. This adds a nice crisp texture.
