Description

This is a nice quick bread using blueberries.   Bake in a 9×5 loaf pan. 


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1-1/2 cups fresh blueberries
  • 2 eggs
  • 1 cup milk
  • 3 tablespoons canola oil
  • 1 teaspoon grated orange zest
  • confectioners’ sugar

Instructions

  1. Preheat oven to 350°F, and lightly grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder and salt. Stir in the blueberries.
  3. In a small bowl, beat together the eggs, milk, oil and orange zest. Add all at once to the flour mixture, stirring just until dry ingredients are moistened. Turn into greased loaf pan.
  4. Bake at 350°F for one hour or until cake tester inserted in center comes out clean. Remove from oven and cool 10 minutes on rack, then remove from pan and cool completely. Sprinkle top with confectioners’ sugar before slicing.
