Nippy Pineapple Salad Recipe

Lots of baby boomers remember this salad, or variations of it, from the Fifties. It’s sweet, tart and, yes, nippy. The nippy taste is because of the horseradish. A nippy pineapple salad is quick and easy to put together, it should definitely be revived for the 21st century. Our family friend Glen gave us this recipe. It was his mother’s and directly out of the 1950’s.

These molded salads store pretty well in the refrigerator. Just keep them covered and finish them after a few days.

Ingredients

  • 1 large package pf lime Jell-O
  • 2-1/2 cups hot water
  • 12-ounce can of crushed pineapple
  • 2 tablespoons prepared horseradish
  • 1 cup mayonnaise (not Miracle Whip or other salad dressing)
  • 2 cups cottage cheese


Instructions

  1. Dissolve Jell-O in the hot water. Chill until partially set.
  2. Mix the other ingredients and fold into the Jell-O.
  3. Pour into mold or 9×13-inch dish and chill until firm.
