Ingredients

  • 2-1/2 to 3 pounds chicken pieces
  • salt and black pepper, to taste
  • vegetable cooking spray
  • 1/2 cup honey
  • 1 cup your favorite barbecue sauce
  • 1 tablespoon fresh lemon juice
  • 1 medium onion, finely chopped
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven to 325°F. Spray a 9×13-inch glass or ceramic baking dish with vegetable cooking spray.
  2. Season the chicken pieces with salt and pepper and place in the baking pan.
  3. In a small bowl, combine the honey, barbecue sauce, lemon juice and chopped onion. Pour evenly over chicken pieces to coat. Cover and refrigerator for at least 3 hours or overnight.
  4. Remove chicken from refrigerator and allow to come to room temperature. Arrange lemon slices over chicken.
  5. Bake, uncovered, for 40 minutes. Turn chicken pieces, and increase oven temperature to 350°F. Bake for an additional 20 minutes or until done.
  6. Makes 4 to 5 servings.
