Beautiful Broiled Tomatoes Recipe

Simple and easy, broiled tomatoes are a delicious accompaniment to any meat dish. — I will admit to not being able to get too excited about tomatoes during the winter when supermarket tomatoes are pale and mealy and tasteless. But come summertime when those big gorgeous tomatoes start showing up in gardens, farmers’ markets, produce stands and, yes, even supermarkets, I can’t think of enough ways to eat them.

Description

Start a beautiful Texas morning with these classic broiled tomatoes. 


Ingredients

  • 3 large, fresh tomatoes, cut in half, crosswise
  • salt and freshly ground pepper
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley
  • 2 tablesppons Italian dressing (bottled or homemade vinaigrette)
  • 3 tablespoons grated Romano cheese

Instructions

  1. Sprinkle salt and pepper on the cut side of each of the tomato halves. Broil for 4 minutes, about 4 inches from the heat. Remove from the broiler.
  2. On each tomato half, place 1 teaspoon butter, 1 teaspoon chopped parsley, 1 teaspoon dressing, and 1 generous teaspoon Romano cheese.
  3. Return to the broiler for 2 minutes.
  4. Serve immediately.
